La salaison des ateliers technologiques transforme, chaque année, 200 tonnes de produits carnés dont 35 % en travail à façon.
Véritable outil de développement territorial et d’insertion professionnelle, elle permet aux apprenants et aux professionnels de se former à la transformation industrielle et fermière de produits carnés.
Notre salaison comporte également un atelier de découpe, support de formations professionnelles adultes principalement, qui permet une approche globale des métiers de la viande.
